Former culinary student tries to figure it all out.

'Culinary school graduate trying to figure it all out. Just what the Internet needs. Another food blog. But I think I might have something to offer. Hear me out. I moved to New York in the fall of 2004 to attend the professional culinary program at the Institute of Culinary Education. I'm starting this blog merely two weeks before completing the program. While I regret not recording my time in the program, I realize that graduating from culinary school is really the beginning of the rest of my life learning about food...or so I hope. Why Kristin Confit? Confit as a culinary preparation traditionally refers to curing, cooking and preserving food items, often in their own fat. No, I don't dream of being simmered and preserved in my own fat, but my thoughts on food, wine and the like are constantly simmering within me, and this blog is a '-Kristin Conft
